Noodle Delicacies at Kovan Name of Store 美味店家 FA JI Minced Meat Fishball Noodle 发记肉脞鱼圆面 Address 地址 209 Hougang Street 21, Kovan Market & Food Centre #01-05, Singapore 530209 Operating Hours 营业时间 7.30am to 9pm (Weekdays 星期一至五); 7am to 7pm (Weekend 周末); closed on Wednesdays 星期三休息 Food Blog 食在好玩 高文发记:必吃肉脞鱼圆面 Kovan Market & Food Centre’s "FA JI" is my top choice for minced meat noodles in Singapore. 新加坡高文熟食中心三档肉脞面，首选“发记”。 Kovan residents seem to love minced meat noodles (bak chor mee) as there are three such stalls in Kovan Market & Food Centre alone. Two of these are located side by side: “Chun Fu Fishball Minced Meat Noodle • Laksa” and “FA JI Minced Meat Fishball Noodle”. The latter is my favourite. There are always long queues in front of both stalls but I enjoy watching the two owner-chefs chit-chatting as they swiftly go about preparing the food. It is as if their daily interactions are the real reason behind the existence of their businesses, and cooking for the customers is just incidental. I have also come across a young man who appears to be the successor at FA JI as he sports the same iconic hairdo as the owner-chef. I have even heard that the three minced meat noodles stalls have coordinated different rest days among themselves so that their customers can enjoy minced meat noodles every day. Be sure to ask the auntie at FA JI for more lard if you are a fan, and remember to tell her that you do not want "cai-i" if you prefer your noodles without chilli.
